1 head Romaine lettuce, chopped 

½ bunch chopped parsley 

½ cup chopped mint leaves 

5 radishes, sliced 

2 cucumbers, sliced 

3 tomatoes, diced 

1 green pepper, diced 

5 spring onions, diced 

2 loaves pita bread cut into 1-inch squares, browned in vegetable oil and drained 



  1. Cut pita bread into 1-inch pieces, brown in vegetable oil, and drain oil.
  2. Combine browned pita bread pieces with all above ingredients.
  3. Add dressing and mix. 




2 cloves garlic, pressed 

½ teaspoon salt 

¼ cup lemon juice 

2 tablespoons white vinegar 

½ cup olive oil 

1 teaspoon sugar 

1 teaspoon dried mint 

1 teaspoon Simmaq (Simmaq is a tart, ground seasoning from the seed of sumac.)



  1. Mix all ingredients.
