2 tablespoons olive oil

¼ cup onions, minced

¼ cup celery, peeled and minced

½ cup red pepper, minced

¾ cup mayonnaise

2 eggs, beaten

1 tablespoon fresh lemon juice

½ tablespoon lemon zest

1 tablespoon Old Bay Seasoning


In a sauté pan over medium-high heat, sauté onions celery and pepper in oil for 2-3 minutes until onions are translucent. Chill mixture.


1 tablespoon Old Bay Seasoning

¼ teaspoon hot red pepper sauce

½ teaspoon fresh garlic, minced

1 tablespoon Custom Culinary lobster base

1½ cups bread crumbs, plain

¼ cup parsley, fresh chopped

½ cup Parmesan cheese, freshly grated

2 pounds Lump, Blue or King Crab Meat (Drained canned clams, shrimp or lobster may be substituted for some or all crab meat).


In a separate stainless steel mixing bowl, combine mayonnaise, eggs, lemon juice and zest, Hot Red Pepper Sauce, Old Bay Seasoning, garlic and lobster bases. Add chilled sautéed vegetables. Blend thoroughly.

Add bread crumbs, parsley and cheese. Blend thoroughly. Carefully fold in crab meat. Form mixture into individual portions. Cook in lightly oiled sauté pan or griddle on medium-high heat until golden on each side. Makes about 12, 2-ounce cakes.
