Ingredients
- 2 pounds okra (fresh or frozen)
- 1 head garlic
- olive oil for frying okra and garlic
- 1 cup tomato sauce
- water, as needed
- salt, pepper, allspice to taste
- 2 cups rice, if desired
Step 1
Slice okra into bite size pieces, discarding the top hat part.
Step 2
Fry the okra in olive oil to get a golden sear, then remove the oil.
Step 3
Add tomato sauce and a blend of salt, pepper, and allspice to taste.
Step 4
Add just enough water to cover the okra comfortably and let simmer.
Step 5
In a clean pan, warm 2 tablespoons of olive oil and fry the garlic until it develops a golden sear.
Step 6
Add the garlic directly to the simmering okra.
Step 7
Let the mixture simmer for another 5 minutes, then enjoy over a bed of rice.
