- 2 large sweet potatoes, washed, peeled, and chopped
- 1 cup figs, sliced
- 1 large honey crisp apple, sliced into thin wedges
- 1 cup water
- 2 tablespoons butter, divided
- 1 tablespoon cinnamon
- ½ cup brown sugar (optional)
Preheat oven to 375°F.
Lightly coat a medium-sized baking dish with 1 tablespoon of butter.
Place sweet potatoes, figs, and apple slices into buttered baking dish; add water.
Top with cinnamon, remaining tablespoon of butter, and brown sugar if desired.
Bake for 45 minutes until sweet potatoes are soft and golden brown.
